Badam and Khus Khus Halwa Recipe @Virasati Rasoi

This Badam Khus Khus Halwa Recipe is a traditional Rajasthani halwa recipe. It is perfect for any festive season and on chilly monsoon or winter evenings. It is very good for kids because of the inherent qualities of two main ingredients; first one Badam (Almonds) which is full of nutrients including Vitamin E.It promotes brain development and boosts energy levels. The second one is Khus Khus (Poppy seeds) which has a soothing cooling effect and are full of Calcium & Zinc.

Halwa Recipe

Preparation

Time: 40 minutes

Serves:  4

Ingredients:

1) 200 grams Badam (Almonds)

2) 50 grams Khuskhus (Poppy seeds)

3) 100 grams of sugar

4) 3 Tablespoon of Ghee

5) Kesar (saffron) a pinch soaked in 2 teaspoon Gulab Jal (Rose Water)

6) Elaichi (cardamom) powder 1/4 tsp for flavour

7) Pistachios for garnishing

8) 1/2 cup water

9) 100 gms Mava (Khoya) -Optional

Method :

  1. Soak 200 gm Badam in water in a bowl overnight.
  2. Soak 50 gm Khuskhus in a strainer (in a bowl the fine granules will scatter) overnight.
  3. Peel off the Badam (almond) skin directly or you may blanch it and put it in a mixer to grind along with Khuskhus. Use very little water while grinding Badam and Khuskhus otherwise, its fine granules will spread in the bowl.
  4. Make a fine paste add water intermittently as required for making a uniform paste. Pour in a separate bowl.
  5. Clean the leftover in the mixer with a small amount of water. Store this milky water for future use separately.
  6. Take a Kadhai or a pan and pour 2 to 3 tablespoon ghee, heat it on low flame. When warm pour Almond-Khuskhus paste. Sauté it for 15 minutes until light brown. You may add the leftover milky water from the mixer to adjust the consistency.
  7. Add 100 grams of grated Mawa (khoya) (optional) CAUTION:  Do not overheat and make it dark brown else  it will lose its nutrient value.
  8. Switch off the gas flame.
  9. Add the rose water with Kesar and Elaichi powder and mix well.
  10. Garnish with Pistachios. Badam Khus Khus Halwa recipe is ready to be served.
